ਐ This is aerdaa with dulaavaan. Note that, like aunkard, dulaenkarday and laanv, when you see it printed, it has quite a curve which is easy to see in the animation on the right.
ਕੈ When writing, you have a (limited) number of choices. In the case of ਅ, it ends with an upward stroke so you can draw the top line of the dulaavann right-to-left - followed by the line below it. In all other cases (unless you find some peculiar way of writing another letter to end like ਅ) you can draw the two lines in one go as in the ਕੈ below it.
